They are soooo chocolate! I mean, really chocolate chocolate : )
Definitely a recipe for those who are in favour of cocoa and (not necessarily sweet) chocolate – that would be my Dad for example. For Mum, not so much.
Muffins are soft and not heavy at all. They can be easily seperated from the cups. And when it comes to taste.. hmmm… a pinch of highly addictive bitterness… : )
Placing them really high on my personal top muffin list : )
Ingredients (12 standard muffins):
- 140g (to-be-melted)
- 60g chopped bitter chocolate
- 1/2 cup cocoa
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 eggs
- 3/4 cup sugar
- 3-4 drops vanilla flavour
- pinch of salt
- 1/2 cup sour cream (18%)
Melt the butter, add chopped chocolate and stir till soft and smooth.
Off the heat, add cocoa and stir thoroughly till it gets smooth again.
Leave for cooling.
Sift flour with baking soda and baking powder.
Whisk the eggs, add sugar, vanilla flavour and salt. Using a spoon, mix the mass.
Add cool chocolate mass to the egg mixture and mix it well.
When the mass gets smooth, add only 1/3 of flour and stir it a bit (do not mix in completely). Add sour cream, mix.
Only then add the rest of the flour and mix thoroughly so to get a nice smooth mass.
Place cups in the muffin pan and fill 2/3 of each with the mass.
Bake for about 20 minutes in 180°C
