Pistachio-Cranberry Bites

Cranberry – yummy, dates – yummy, honey – yummy and… my beloved pistachios!
That kind of snacks should be recommended worldwide
just because they’re
and they will satisfy your tummy ;P
(Apart from baking attempts, I took up a rhyming course ;P)

The balls are honeyish with a bit of saltiness thanks to pistachios. They’re also sticky-sticky because of dates being used.
As the original recipe gives, they’re called Energy Bites, which is sooo understandable since both nuts and dried fruit are a real dose of energetic kick for you ;D Even though the balls are so tiny :)
I assume my adventure with these has just started and I’ll go on with experimenting with them changing and mixing the ingredients as much as I like :)

Oh, and I would have forgotten, I dedicate this recipe to my dear blender which decided to pass away ;P

Ingredients (yield 16 small bites):

  • 1 cup dates
  • 1/4 cup honey (I took 2 tablespoons but you can use a bit less)
  • 1 flat Tbs flax seeds
  • a pinch of salt
  • 3/4 cup dry oats
  • a bit more than 1/2 cup shelled pistchios
  • 1/2 cup dried cranberry

Chop the pistachios into smaller pieces. Leave aside.

Chop the dates.
Add honey, flax seeds and salt. Blend them until it gets smooth and incorporated… you know, something like a paste :)

Stir the oats with pistachios and cranberries.

Add the dates paste into the dry ingredients and combine it (hand-stir, hand-stir :)) until all incorporated.

Cool in the fridge for half an hour.

Once it’s cooled, form the mini-bites :)

It’s a good idea to store them in the fridge.
