Made late in the evening just because… there are too few biscuit/cookie recipes on Sarenka ;P
Well, my love to everything that is wholemeal-like is nothing new therefore these biscuits :)
Making them is ridiculously fast, which is kind of important when you compare the effort made with the final results :)
And since not everyone is fond of healthy and fit stuff, some of the biscuits asked me to glaze them with chocolate… Well, how could I refuse? ;D
One more thing when it comes to baking them, according to the original recipe, I should get 35 biscuits, while I got only… 20! That is why I decided to keep them in the oven a bit longer than the author suggests :)
And the biscuits themselves? Quite crumbly, strongly wholemeal, not that sweet and perfect to accompany a glass of warm milk or grain coffee :) And healthier, of course!
Ingredients (yields 20 biscuits):
- 90g butter
- 1/4 cup brown sugar (60g)
- 1 egg
- nearly one cup wholemeal flour (120g)
- 1/2 cup all-purpose flour (75g)
- 1/4 cup desiccated coconut
- 1/4 cup bran (I used wheatbran)
- 1/4 tsp baking soda
- 1/4 tsp baking powder
- 60g chocolate
Line the form with bakery paper.
In a bowl combine flours, desiccated coconut, bran, baking soda and baking powder.
Mix the butter for a moment. Add sugar and mix until somehow combined.
Add the egg and mix again till combined.
Add dry ingredients to the wet ones and mix thoroughly.
The mass you’ll get should be really thick – mixer can be on the verge of dying ;P
Form little balls and place them on the form. Press a bit using a fork.
Bake at 180°C for about 15-18 minutes* till they get a bit brownish.
Melt the chocolate in a steam bath and decorate the biscuits.
*time baking in the original recipe oscillates around 12 minutes
