Chocolate Ice-Cream – Classic

It’s getting warmer, true.
Time to mix some ice-cream, true.
They’re staying with me for good, soooo true :)

Really chocolatey. With creamy consistency, no crystalising. And so easy to be made.
Do you need more? I don’t :)

Ingredients (for about 700ml):

  • 300ml heavy cream
  • 300ml milk
  • 90g sugar (about 1/3 cup)
  • 4 yolks
  • 100g dark chocolate
  • 60g milk chocolate
  • 1 flat tsp vanilla flavour (next time I’ll exchange it with 1 Tbs of vodka :))

Chop both chocolates.

Whisk the yolks till they get whitish.

Heat up milk with cream and sugar till it’s dissolved. Do not boil the mixture!

Add whisked yolks to warm milk mixture still stiring it and keeping it on low-heat.
It’ll take a moment or two :)

Once the mass gets gluey and sticky and really thick, take it off the heat. Do not boil it!!!

Add chopped chocolate and the flavour and stir everything thoroughly till it’s smooth and combined.

Leave for the whole night in the fridge.

The next day, start mixing it every one or two hours, putting the mass in the freezer after each mixing.
When the mass gets so thick that it will be impossible to mix it, leave it in the freezer :)
