Just… not many passion fruit here… Such a shame ;P
It’s creamy. Not that sweet. With a lot of seeds :)
Of course, if you want, you can get rid of them but… naaah :)
If I find any passion fruit being sold here, I’ll be making more of this ice-cream for sure! More and more!
Ingredients (for 1l):
- 1/2 cup milk
- 1 1/2 cup heavy cream
- 2/3 cup sugar
- 6 yolks
- 8-9 passion fruit pulp
Heat up milk with heavy cream and sugar, mixing till sugar is dissolved.
Off the heat.
Whisk the yolks.
Add a bit of warm milk to warm up the yolks. Stir a bit.
Go back to heating up the milk, adding the yolks and stirring it all the time.
Keep on stirring for a while till the mass gets a bit thick and sticky.
Do not boil it!
Just before the boiling moment, take it off the heat and chill.
Prepare the pulp.
Once the egg mass is chilled, add the pulp and mix it all.
Leave it in the fridge for the whole night.
And in the morning…
… mixing mixing mixing :)
After each mixing, leave ice-cream in the freezer.
When the mass is so thick so that you can’t mix it, leave in the freezer for good :)
