Just stopped by to leave these little meringues here :)

There was a heavy storm in my town today… Oh, heavy it was :)

Well, the storm is over – time to bake something!
Whites left after making RedCurrant Ice-Cream couldn’t wait anymore… :)
Inspired by Kinga, I made them… Not too sweet, a bit coffee-like, a a bit caramel-like… Perfectly go with a cup coffee :)

MiniMeringues Ingredients (gives 15-16 meringues):

  • 3 whites
  • pinch of salt
  • a bit more than 1/2 cup brown sugar
  • few drops of lemon juice
  • few drops of vanilla aroma

Line the form with bakery paper.

Pre-heat the oven to 150°C.

Beat the whites so that they get thick.
Add a pinch of salt. Beat.
At the end of beating, start adding sugar, spoon by spoon, gradually. No haste :)
Whites should get thick and shiny :)

Add lemon juice and vanilla aroma. Mix in.

Place the mass on the bakery paper using a decorating bag.
I’m too impatient that is why I used a spoon… Now you understand why my meringues look that crippled ;P
I can ensure you it’s no difference for the taste, though :)

Dry the meringues for around 50 minutes.

Once they’re dried, chill them ajar up to two hours.
