Oh, I was supposed to make this brownies long long time ago… Actually, last year :)
But as they say, happens :)
This year I couldn’t say no to it…
I just love all cheesecakes, I just love all brownies, I just love… all raspberries ;)
Flawless combination it is.
PS. This recipe is taken from Moje Wypieki but having read some of the comments and suggestions, I decided to introduce small aterations :)
PS2. While writing these words, brownies is still in the oven… And do believe me, the smell is way-out! Oh my!
Cheese Mass Ingredients (form 20x30cm or a bit smaller):
- 400g cheese or cream cheese
- 100g baking sugar (about 1/2 cup)
- 2 eggs
- 16g vanilla sugar
Mix the cheese with sugar till it’s combined.
Start adding eggs, one by one. Mix.
Add vanilla sugar and mix everything till it’s combined.
The mass should be a bit creamy.
- 200g dark chocolate
- 150g baking sugar
- 3 eggs
- 150g soft butter
- 110g all-purpose flour
Melt the chocolate in a chocolate bath.
Leave aside for cooling.
Mix butter with sugar till it’s combined.
Start adding eggs, one by one, mixing thoroughly after each adding. Remember, no haste :)
Gradually start adding melted chocolate and mix till it’s combined.
Last but not least, add flour and stir it in using a spatula.
The mass is quite thick… and may cause some trouble while placing it in the form :)
Line the form with bakery paper.
Put half of the brownies mass on the bottom of the form.
Pour it with the cheese mass.
Put the rest of brownies on top… I mean, try to do it ;P
Put raspberries on top of the cake (the recipe suggests around 120g of fruit, which is… hmm.. a cup of raspberries, more or less :))
Bake at 170°C for about 60-70 minutes.
Depends on the oven, really.
