Yeast Cupcakes

Oh my, oh my. My fingers just got so itchy to bake :)
Something with yeast, yes yes.
I got a bit jealous, too :) Girls from other blogs were making buns, rolls, bread, croissants… Gosh, and what about me? :)
Straight to the kitchen, quick kneading, quick crumble making… and finally this beautiful smell of a yeast cake all around… To tell you, it’s something that can’t be described… For me, it’s just the smell of cosiness, home and love.

Dough Ingredients (gives about 10 cupcakes):

  • 230g all-purpose flour
  • 7 g instant yeast or 14g fresh yeast
  • 50g sugar
  • 16g vanilla sugar
  • 1/2 cup warm milk
  • 2 yolks
  • 50g butter

Stir the flour with yeast.

Heat up the milk a bit with both sugar till they are dissolved.

Pour the dry ingredients with warm milk and start kneading.

Whisk the yolks, add to the mass and knead thoroughly.

Melt the butter.
Add to the mass and knead, knead, knead (your arms are in pain? good! :)) and knead again till the dough is pliable :)

Leave aside for growing (for about 1,5h).
It should double its size.

In the meantime, butter the muffin form and sprinkle it a bit with flour.

And… make crumble :)

Crumble Ingredients:

  • 60g all-purpose flour
  • 50g sugar
  • 50g butter
  • 1 tsp vanilla sugar

Combine all the ingredients using your fingertips only :)

Once the dough is doubled, knead it again just for a moment.
Form little rolls and place them in muffin nests :)
Leave again for growing for about 30 minutes.

Glaze the cupcakes with an egg whisked with a tablespoon of milk.

Sprinkle with crumble and… straight to the hot oven :)

Bake at 190°C for about 20 minutes or a bit longer.

Cool ajar… but just for a moment :)
