Maple Ice-Cream

Actually, I’ve got one question only – why is maple syrup so damn expensive??? Why, why, why? Ehh…
If it were cheaper, do believe me I would be making this ice-cream all the time!
What else can I say? I think you get what I mean…

Ingredients (for about 800ml):

  • 200ml milk
  • 300ml heavy cream
  • 180ml maple syrup
  • 3 yolks
  • 30g sugar
  • 100g roast nuts (I used pecans and walnuts, half-half… (but prepared this way :))

Soo… prepare the nuts in a way it’s given in the ingredients part :)

Heat up milk with heavy cream and sugar, mixing till sugar is dissolved.
Off the heat.

Whisk the yolks.
Add a bit of warm milk to warm up the yolks. Stir a bit.

Go back to heating up the milk, adding the yolks and stirring it all the time.
Keep on stirring for a while till the mass gets a bit thick and sticky.
Do not boil it!
Just before the boiling moment, take it off the heat.

After a moment add maple syrup and stir it into the mass.

Leave for cooling.
Then put in the fridge overnight.

And in the morning…
… mixing mixing mixing :)
Every 1,5-2h.
After each mixing, leave ice-cream in the freezer.
Once the mass gets more and more thick, add carmelised walnuts and stir them into the ice-cream mass.

When the mass is so thick so that you can’t mix it, leave in the freezer for good :)
I mean, till the next morning :)
Then you can eat as much as you want ;)
