The moment I read through the recipe, I knew this taste would be outstanding. I just didn’t realise this ice-cream would jump into my Top3!
So very coffee. So very whisky. Impossible to resist.

Ingredients (gives about 800-900ml):
- 4 yolks
- 150ml milk
- 150g muscovado
- 150ml coffee (I used 3 teaspoons of instant coffee)
- 300ml heavy cream
- 2 Tbs whisky
Heat up milk with muscovado until sugar is dissolved.
Take off the heat and chill a bit.
Add a bit of warm milk and stir it.
Add a bit more of milk and stir it again.
Warming up the yolks – great success ;P
Combine the egg mass with warm milk and start heating up again, stirring constantly.
Heat up till the boiling moment.
Take off the heat.
Do not boil the mass!
Add coffee, heavy cream and whisky and stir it until all combined.
Leave in the fridge overnight.
The next day, mix the mass and place it in the freezer.
Mix it every 1,5h so that the mass is smooth and does not crystalise :)
When the mass is so thick so that you can’t mix it, leave in the freezer.
