No Bake Toffi Cheesecake

Short but reeealy intense need to make some cheesecakes! That is why, two cheese-recipes coming up :)

Seriously though, there were several things that made me prepare this cheesecake… Firstly, never have I made mascarpone cheesecake sooo… high time :) Secondly, never have I made no baking cheesecake soooo… high time? :) Thirdly, the moment I saw the recipe and the photo presenting this cake, I knew it would be impossible to refrain oneself from making it, not to mention eating it! And finally, all the ingredients were patiently waiting in my kitchen to use them in a reasonable and… yummy way :) Coincidence? Doubtful :)
Oh, and above all, this cake was made to convince an Anti-Cheesecake Lady to cheesecakes in general! Was it successful? I guess it was :)

Toffi Cheesecake is quite creamy and very sweet :)
One piece of it will satisfy your belly for sure :)

If you have a really sweet tooth, this cake is certainly for you!

Bottom Ingredients (form 21cm):

  • 100g dark chocolate
  • 100g milk chocolate
  • 2 Tbs butter

Line the bottom of the form with baking paper.
Put the form in the freezer for a moment.

Chop the chocolates into pieces and melt them with butter in water bath.

Take out the form from the freezer.
Pour chocolate mass on the bottom of the form.
Put it in the freezer again and wait till chocolate gets a bit thicker.

Cheese Mass Ingredients :

  • 500g mascarpone
  • 1 cup heavy cream (33%)
  • 3 Tbs icing sugar
  • 3 tsp vanilla sugar

Combine mascarpone with icing sugar.
No mixing is necessary at this point.

Mix heavy cream with vanilla sugar until you get thick creamy mass.

Start adding whipped cream to mascarpone, in two or three turns.
No need to hurry :)

When the cheese mass is combined, pour it onto the chocolate bottom and leave in the fridge.


  • 150g unsalted peanuts
  • 250g dulce de leche
  • 1 Tbs butter

Roast peanuts a bit on a frying pan.

Heat up dulce de leche with butter until incorporated.

Put the peanuts onto the cheese mass and press a bit.
Pour it with dulce de leche mass and leave in the fridge for cooling :)

Decorate it the way you wish :)
