No Bake Toffi Cheesecake

Short but reeealy intense need to make some cheesecakes! That is why, two cheese-recipes coming up :)

Seriously though, there were several things that made me prepare this cheesecake… Firstly, never have I made mascarpone cheesecake sooo… high time :) Secondly, never have I made no baking cheesecake soooo… high time? :) Thirdly, the moment I saw the recipe and the photo presenting this cake, I knew it would be impossible to refrain oneself from making it, not to mention eating it! And finally, all the ingredients were patiently waiting in my kitchen to use them in a reasonable and… yummy way :) Coincidence? Doubtful :)
Oh, and above all, this cake was made to convince an Anti-Cheesecake Lady to cheesecakes in general! Was it successful? I guess it was :)

Toffi Cheesecake is quite creamy and very sweet :)
One piece of it will satisfy your belly for sure :)

If you have a really sweet tooth, this cake is certainly for you!

Christmas cakes are almost ready. One cheesecake is still in the oven… but almost done.
Not sure how it’s with you but I’m literally surrounded by sweets! How can I say no to them? Well, I can’t. And I don’t want to.

But coming back, I’m here to wish you beautiful Christmas. Full of peace.
I guess that’s what we all need the most nowadays. I’ve noticed so many people wishing peace to each other. We lack it, that’s for sure.
When I look at myself… last six months… I don’t know when it’s passed. I really don’t know. I’m trying not to waste time. To use every single hour, every single minute of the day… and still, something is slipping through my fingers. I can feel it.

Pay attention to little things. Keep your eyes open.
It’s good to see things. It’s better to notice them.
Good to listen. Better to hear.

PeanutButter MiniCheesecakes

It’s been a week or more now since I started eating peanut butter regularly. By saying regularly I mean… everyday ;)
Sometimes I’m trying to pretend that it’s only an addition to some wafers… But sometimes this pretending is pointless – I just eat it straight from the jar… My jeans started protesting.

Because of my new eating habit, I realised I forgot to post one of the recipes based on peanut butter.

Brownie with Drunk Prunes

And yet another idea for a very good and heavy portion of a chocolate cake.
You know what I think about Brownies… I’ve said it so many times… Baking this cake only confirmed what I thought before – Brownies The King of Chocolate Cakes :)
And let me underline (subjectively so) that this cake is way better than the oatmeal one :)
Adding prunes made the cake more creamy and wet, which is really really good :)
You know me, I tend to panic for no reason. At first I thought the cake was not ready yet… as if it were still raw… And then it occured to me that these are prunes which give this creamy feeling… Gosh, one day I’ll be totally lost in this world ;P

I’ve got my own bakelist and I’m trying to keep it up-to-date… This time I also decided to check to exact date of adding this recipe to my list… and it turned out it was a year ago… Time flies ;)

Maja made a richer version of this cake. Me, the lazy one, tried to make it simple ;)
